  • 1 Cup unsalted butter, melted
  • 1 1/4 Cup brown sugar
  • 2 large eggs
  • 2 Teaspoons vanilla
  • 2 Teaspoons baking soda
  • 1/2 Teaspoon salt
  • 2 Teaspoons cinnamon
  • 1 Teaspoon nutmeg
  • 1 Cup Walnuts
  • 2 small zucchini (or 1 large), shredded.  Should be about 3 cups.
