• 1/4 Cup green pepper, diced fine
• 1/4 Cup red pepper, diced fine
• 1/4 Cup orange pepper, diced fine (optional)
• 2 large eggs
• 2 ounces Pepper Jack cheese (3 if you want guaranteed ooze)
• 1 Tablespoon butter
• Salt and pepper
