
Savory Pancakes with Chicken Curry

- Chickpea Pancakes (Adapted from a Socca recipe from Kalyn's Kitchen):
- I tripled the original recipe because I figured I'd screw up a bunch of them... I was right.
- 3 Cups Chickpea flour
- 3 1/4 Cups water
- 2 Teaspoons kosher salt (or 1 Teaspoon regular)
- 1 Teaspoon whole cumin seeds or 1/2 Teaspoon ground cumin
- 1/4 Cup olive oil (plus a bit more for the pan)
- Chicken Curry:
- 2.5 pounds boneless skinless chicken thighs
- 1 medium onion, diced
- 1 red pepper, diced
- 2 inches fresh ginger, minced or grated
- 3 cloves garlic, minced
- 3 Tablespoons neutral oil (like canola)
- 3 Tablespoons yellow curry powder
- 2 12 ounce jars of mango chutney
- 1 15 ounce can coconut milk
- 2 Cups water
- 2 Cups golden raisins
- 2 Tablespoons brown sugar
- Pinch of salt
