 - 1.5-2 (about 8 ounces) Cups Gruyere cheese, grated
 - Salt and Pepper
 - 1 Teaspoon cayenne pepper
 - 1 Tablespoon Tabasco or other hot sauce (optional)
 - Homemade Pita Chips (for serving):
 - 12 wheat pitas, cut into sixths
 - Olive oil
