  • 3 1/2 Cups all-purpose flour (you probably won't use all of it)
  • 2 eggs
  • 3 egg yolks
  • 1 Teaspoon salt
  • Filling:
  • 1 pound chestnuts (about 20)
  • 8 ounces Mascarpone
  • Very tiny pinch of cinnamon
  • Pinch of salt
  • 1 egg for egg wash (plus a Tablespoon of water)
  • 4 Tablespoons butter for brown butter sauce
