- 3 1/2 Cups all-purpose flour (you probably won't use all of it)
- 2 eggs
- 3 egg yolks
- 1 Teaspoon salt
- Filling:
- 1 pound chestnuts (about 20)
- 8 ounces Mascarpone
- Very tiny pinch of cinnamon
- Pinch of salt
- 1 egg for egg wash (plus a Tablespoon of water)
- 4 Tablespoons butter for brown butter sauce
