
Shrimp and Red Pepper Pesto Pizza
Ingredients (18)
- 1/2 pound large (16-20 count) shrimp, peeled, deveined, and halfed
- 1 cloves garlic, minced
- 2 Tablespoons olive oil
- Juice from 1/2 lemon
- 1/2 Teaspoon red pepper flake
- 1/4 medium onion, cut into thin strips
- 1/4 red pepper, seeded and cut into strips
- 2 Cups low-moisture mozzarella cheese
- Fresh basil (I left this off because I didn't have any. It was fine.)
- 2/3 Cup red pepper pesto
- Roasted Red Pepper Pesto (Makes about 2 cups):
- Clove garlic
- 1 jar (16 ounces) roasted red peppers
- 3 Tablespoons grated Parmesan
- 1 Tablespoon fresh basil
- 1 Tablespoon olive oil
- 1 Teaspoon sugar
- 1/2 Teaspoon red pepper flakes
