
Pumpkin Shrimp Curry Recipe
Ingredients (23)
- 1/4 cup olive or canola oil
- 1 lb medium shrimp
- 3 cloves garlic
- 1 2" piece ginger, peeled and finely chopped
- 1 medium yellow onion
- 2 bay leaves
- 2 tsp ground coriander
- 1 tsp ground cinnamon
- 1/4 tsp allspice
- 1 tsp ground cumin
- 1 Tbsp garam masala
- 1 tsp smoked paprika
- 1/2 tsp ground turmeric
- 1 15 oz can full fat coconut milk
- 1 7 oz can pumpkin puree (not pumpkin pie mix)
- 4 red potatoes
- 2 small eggplant
- 1 red bell pepper
- 1 green bell pepper
- Juice of 1 lime
- 1/2 cup chicken or vegetable stock
- Chopped cilantro and basil leaves to garnish
- Kosher salt and freshly ground black pepper
