  • 1 15 oz can full fat coconut milk
  • 1 7 oz can pumpkin puree (not pumpkin pie mix)
  • 4 red potatoes
  • 2 small eggplant
  • 1 red bell pepper
  • 1 green bell pepper
  • Juice of 1 lime
  • 1/2 cup chicken or vegetable stock
  • Chopped cilantro and basil leaves to garnish
  • Kosher salt and freshly ground black pepper
