- 8-12 oz sliced crimini mushrooms
- 1/4 cup olive oil
- 1/4 cup marsala wine (or white wine)
- 4 salmon filets
- 4 Tbsp fresh thyme
- Salt and pepper to taste and season
- 2 zucchini
- 1 can reduced fat coconut milk
- 1 cup chicken or vegetable stock
- 1/2 cup of white wine plus a splash
- 1 Tbsp lemon juice
- 1 tsp arrowroot powder
- 3 tsp garlic powder
- 1 tsp paprika
