
Cashew Pesto Seared Cod Fillets
Ingredients (22)
- Fish, Greens, and Potatoes:
- 2 purple sweet potatoes
- 4 cups butternut squash
- 1/2 cup olive oil
- 4 cod fillets
- Sautéed Greens:
- 1/2 cup whole dill weed
- 1 Tbsp minced garlic
- 1 bunch of red chard
- 1/4 lemon
- Salt and pepper to taste
- 1 tsp honey
- 1/4 tsp red pepper flakes
- PESTO:
- 1 cup basil
- 2 cup finely chopped chives
- 2/3 cup raw cashew pieces
- 2 Tbsp Greek yogurt or nondairy alternative
- 2 tsp garlic powder
- ¼ cup olive oil
- 1/2 a lemon
- Kosher salt and black pepper to taste
