  • 2 dozen corn tortillas
  • 4 T. olive oil
  • 1 red pepper
  • 1 medium onion
  • 1 jalapeño
  • 1 can Bush’s black beans
  • 1/2 about 6 oz: jar Corn and Chili Salsa from Trader Joe’s
  • 1 T. cumin
  • 1 tsp. chili powder
  • salt and pepper to taste
  • 2 cups grated sharp Cheddar cheese
  • 2 cups grated Jack cheese
  • 2 medium sweet potatoes
