Ravioli with Goat Cheese and Sage Filling

Wonton wrappers make quick work of homemade ravioli.

Place ravioli on a baking sheet and freeze, then store in a plastic bag in the freezer up to 6 months.

  • Cooking Spray
  • 8 ounce goat cheese, softened to room temperature
  • 2 eggs, well beaten
  • 1/4 cup minced onion
  • 4 clove garlic, minced
  • 12 leaf sage, fresh
  • 24 wonton wrappers

Directions

  1. Combine goat cheese, eggs, onion and garlic.
  2. Place 2 tablespoons of water in a small dish. Working with one wonton wrapper at a time, and keeping the remaining wrappers covered, moisten the edges of the wrapper. Place 2 teaspoons cheese mixture in center of wrapper; top with a sage leaf. Place another wrapper on top, pressing well with a fork to seal edges.
  3. Drop ravioli (frozen or fresh) into a pot of boiling water. They're done when they rise to the surface. Makes 12 ravioli.
