  • 2 medium/large tomatoes (seeded and chopped)
  • 1 medium celery stalk (chopped)
  • 1 half red onion (chopped if desired)
  • 1/2 teaspoon oregano
  • 1/4-1/2 teaspoon salt (or to taste)
  • 5-6 fresh basil leaves chopped
  • 1 small fresh mozzarella (chopped if desired)
  • 3-4 tablespoons olive oil
