- FOR THE CUPCAKES:
- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup salted butter (softened)
- 1 cup granulated sugar
- 2 large eggs (room temperature)*
- 1/2 teaspoon vanilla
- 1 tablespoon lemon zest (zest of 1 medium lemon)
- 1/2 cup milk 2% or whole (room temperature)*
- 1 1/2 tablespoons lemon juice
- *Remove from the fridge 45 minutes before using.:
- FOR THE FROSTING:
- 1 cup whipping cream (cold)
- 1/4 cup + 2 tablespoons icing / powdered sugar
- 1 tablespoon lemon juice
