Hearty Chickpea Soup

  • 2 tablespoons olive oil
  • 1/2 onion
  • 1 clove garlic
  • 1 stalk celery
  • 1 potato
  • 2 1/4 cups chickpeas**
  • 1 can tomatoes pelati (nothing added)
  • 3 cups water
  • 1-2 tablespoons fresh parsley
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • hot pepper flakes to taste
  • 1 1/2 cups cooked pasta
  • **3/4 cups of dried chickpeas (should equal 2 1/4 cups) soaked for 8 hours in cold water, then drained and rinsed.:
