- 1/4 cup + 2 tablespoons freshly grated parmesan cheese
- 2 tablespoons freshly grated parmesan cheese for topping

- pinch of salt
- pinch of nutmeg
- 24 large pasta shells
- FOR THE SAUCE
- 2 1/2 cups tomato puree
- 1/2 in onion cut half
- 1 carrot quartered
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 2-3 leaves fresh basil
- 1 1/2 cups water
- 1/4 cup whole cream
