- 0.5 cup uncooked brown rice
- 1.5 tsp avocado oil divided

- 1 cup green pepper finely chopped
- 0.5 cup red pepper finely chopped

- 4 cup water divided (use more if needed)
- 10 oz black beans dried, sorted and rinsed (1 1/2 cups)
- 1 cup Spanish onion finely chopped
