Ingredients (12)
- 0.5 cup bulgur wheat
- 0.5 medium red bell pepper seeded and diced (about 1/2 cup)
- 3 small tomatoes (about 1 pound), diced (about 2 1/2 cups)
- 4 tbsp fresh mint minced
- 3 green onion (scallion) finely minced (about 1/2 cup)
- 0.5 cup cucumber(s) peeled, seeded, and diced
- 2 bunch fresh parsley (about 1/2 pound), thick stems removed
- 1 hot water to cover and soak bulgur
- 1 cup canned chickpeas (garbanzos) drained and rinsed
- 3 tbsp fresh lemon juice
- 3 tbsp olive oil
- 0.25 tbsp salt
