  • 0.5 cup bulgur wheat
  • 0.5 medium red bell pepper seeded and diced (about 1/2 cup)
  • 3 small tomatoes (about 1 pound), diced (about 2 1/2 cups)
  • 4 tbsp fresh mint minced
  • 3 green onion (scallion) finely minced (about 1/2 cup)
  • 0.5 cup cucumber(s) peeled, seeded, and diced
  • 2 bunch fresh parsley (about 1/2 pound), thick stems removed
  • 1 hot water to cover and soak bulgur
  • 1 cup canned chickpeas (garbanzos) drained and rinsed
  • 3 tbsp fresh lemon juice
  • 3 tbsp olive oil
  • 0.25 tbsp salt
