- 12 oz firm tofu drained and cut into 1-inch cubes
- 4 tsp olive oil divided
- 1 cup chicken or vegetable broth fat-free, low-sodium
- 24 oz fresh or frozen mixed vegetables such as carrots, broccoli and snow peas
- 2 tbsp lower sodium soy sauce divided use
