- 2 green onion (scallion) thinly sliced
- 0.25 cup roasted red peppers drained and thinly sliced
- 1 cup fresh, frozen, or canned corn kernels thawed if frozen
- 1 tbsp olive oil
- 1 onion finely chopped
- 1 nonstick olive oil spray
- 8 frozen phyllo dough at room temperature
