  • 1 large egg yolk
  • 2 tbsp ice water
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup (1 stick) very cold unsalted butter, cut into cubes
  • FRUIT TART:
  • 1 1/2 cups whole milk
  • 4 large eggs
  • 1/3 cup granulated sugar
  • 3 tbsp corn starch
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 1 mango, peeled and cut into 1/4-inch thick slices
  • 2 cups fresh strawberries, tops removed and halved lengthwise
  • 1 cup raspberries
  • 2 kiwi fruits, peeled, halved lengthwise, and cut into 1/4-inch slices
  • 1/2 cup blueberries
  • 1/2 cup apricot preserves (or jam)
