• 2 1 1/4 lb live lobsters
• 8 tbsp butter
• 1/4 cup brandy
• 6 sprigs fresh parsley
• 6 sprigs fresh thyme
• 1 bay leaf
• 4 whole cloves
• 2 quarts fish stock
• 2 carrots
• 2 celery stalks
• 1 onion
• 1/3 cup long grain rice
• 2 tbsp tomato paste
• 2 cups dry white wine
• 1/2 cup heavy cream
• Salt and pepper
