  • 8 tbsp 1 stick unsalted butter, cut into 4 pieces

  • 1 cup all-purpose flour

  • FOR THE GANACHE:
  • 3/4 cup heavy cream
  • 3/4 lb 12 oz. bittersweet chocolate, finely chopped (a food processor works best)
