- 2 cups chicken stock
- 1/2 cup good olive oil
- 2 yellow onions
- 2 carrots
- 8 cloves garlic
- 2 sprigs fresh sage
- 1/2 teaspoon red pepper flakes
- 2 ounces pancetta
- 2 heads escarole
- 1 28 oz. can whole tomatoes
- Salt and pepper
- Juice of 1 lemon
