Double Chocolate Cupcakes with Sprinkles

  • 3 oz. semi sweet chocolate, chopped
  • 1 1/2 cups fresh brewed coffee
  • 3 cups sugar
  • 2 1/2 cups all purpose flour
  • 1 1/2 cups unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 3/4 teaspoon baking powder
  • 1 heaping teaspoon salt
  • 3 large eggs
  • 3/4 cups vegetable oil
  • 1 1/2 cups buttermilk
  • 3/4 teaspoon vanilla extract
  • 3 ounces semi sweet chocolate, chopped
  • 2 ounces unsweetened chocolate, chopped
  • 4 Tablespoons butter
  • Pinch salt
  • 4 cups powdered sugar
  • 3 teaspoons vanilla extract
  • 1 Tablespoon coffee (if you have it leftover from the cake--it's not totally necessary, but I feel like it cuts the sweet of the powdered sugar nicely)
  • 6-8 Tablespoons half and half (or milk or cream)
