
Lime Tart with Blueberry Apricot Topping
Ingredients (16)
- 3 large eggs
- 3 large egg yolks
- ¾ cup sugar
- 1 cup fresh lime juice
- 6 tbsp (3/4 stick) unsalted butter, cut into 6 pieces
- 1 ½ cup all purpose flour
- ½ cup confectioner’s sugar
- ¼ tsp salt
- 9 tbsp (or 1 stick plus 1 tbsp) very cold or frozen unsalted butter, cut into small
- pieces
- 1 large egg yolk
- Fresh blueberries (as many as you want!)
- Whipped cream would be nice too (although I didn’t use any myself)
- 2 tbsp apricot jam
- 1 tbsp water
- 1 tbsp dark rum (optional)
