Pistachio Chia Pudding

  • 1/3 cup shelled pistachios (soaked for 2 hours and drained)
  • 1 teaspoon vanilla
  • 2 tablespoons maple syrup
  • 1/4 cup of chia seeds
  • 1 cup water

Directions

  1. Combine everything but the chia seeds in a blender and blend until smooth.
  2. Add chia seeds and stir.
  3. Refrigerate for two hours before eating.
