Creamy Zucchini Dressing with Tahini and Lemon

  • 1 medium zucchini, trimmed and cut into 2-inch pieces
  • 1/2 cup extra-virgin olive oil
  • 1 garlic clove
  • 1/4 cup lemon juice
  • 2 tablespoon tahini
  • 2 tablespoon water, plus more as needed
  • 1 tablespoon honey
  • 1/2 teaspoon coarse salt

Directions

  1. Combine ingredients in a food processor or blender. Whirl until smooth. Makes 2 1/4 cups.
