Creamy Zucchini Dressing with Tahini and Lemon
This tart sauce perfectly dresses grilled fish, lamb, or a tossed green salad.
Ingredients (8)
- 1 medium zucchini, trimmed and cut into 2-inch pieces
- 1/2 cup extra-virgin olive oil
- 1 garlic clove
- 1/4 cup lemon juice
- 2 tablespoon tahini
- 2 tablespoon water, plus more as needed
- 1 tablespoon honey
- 1/2 teaspoon coarse salt
Directions
- Combine ingredients in a food processor or blender. Whirl until smooth. Makes 2 1/4 cups.
