Holiday Sweet Potato Casserole With Marshmallows
Many people believe that the holidays are not complete if this dish is missing.
Sweet potato casserole is one of the most iconic dishes you can serve. And make no mistake, this is a dessert masquerading as a side dish :) Sugar, butter, marshmallows, cinnamon, vanilla extract and nutmeg...it is a pie without the crust. But try and serve a more healthy alternative and everyone will be asking what happened to the mini marshmallows. Decadent and delish!
Ingredients (9)
- 3 pounds sweet potatoes, peeled and cubed
- ½ cup brown sugar
- ⅓ cup butter, room temperature
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt (pink Himalayan if you have it)
- ¾ cup chopped pecans
- 2 cups mini marshmallows
Directions
- Grease a casserole dish (9 x 13 is best but anything close will do) and preheat your oven to 375 degrees.
- Now it is time to boil the sweet potatoes. drop them in the water after it reaches boiling temp and then turn down burner and simmer for approximately 12 minutes, until you can easily pierce them with a fork. Try not to overcook. Drain thoroughly.
- While potatoes are boiling, combine all remaining ingredients (except the marshmallows and pecans) into a mixing bowl and mix until smooth.
- Once potatoes are drained, add the mixing bowl with combined ingredients and mash everything together until is becomes a puree.
- Add half of the chopped pecans into the mixture and gently stir them in.
- Put entire mixture into greased pan and then add the remaining pecans and all the marshmallows as toppings.
- Bake entire thing for roughly 20 minutes watching marshmallows carefully. When they are golden brown, take out of the oven.
